How to make Twice Baked Bacon Cheese Potatoes
Pre-heat the oven at a temperature of 200 degrees Celsius. Wash the potatoes thoroughly under water and pat dry usng kitchen towel. Now, brush them with a little oil and wrap the potatoes in an aluminium foil and place in the pre-heated oven for about 10 minutes until soft. Once done remove from oven and keep aside.
Slice the baked potatoes into half and scoop out the flesh. Keep it aside for a while. On a chopping board cut onion into thin slices and chop the green chilies. Now heat butter in a pan over medium flame and add onion slices and chopped chilies in it. Saute for a while till onion becomes translucent.
Add the ginger and garlic paste in the same pan and saute till the raw smell of ginger and garlic disappears. Now, add bacon slices with the red chili powder, turmeric powder, vegetable stock, all purpose flour, salt and black pepper powder into the pan and mix well.
Cover the pan using a lid and simmer the mixture for a few minutes till the veg stock gets absorbed. Once done, remove the mixture from flame and add on the sour cream. Again mix all the ingredients well and spoon the mixture equally in to the potato halves.
Grate the cheese over it and bake again for about 10-15 minutes, until the cheese melts. Remove from the oven after sometime and serve hot.
